Bread Machine Recipe for Keith's Exceptional Wheat Bread

This recipe produces a light golden brown loaf, flavorful and nutritious. Not as sweet and a little less moist than Dave's Killer Bread.

Flour Mix and Seed Mix may be prepared in advance for 7 loaves at least

Flour Mix (per  loaf, recommend using weight to measure)

2 ½ cups (300 gm) White bread flour (Bob’s Artisan)

1 cup (152 gm) Whole Wheat Flour

¼ cup (30 gm) Vital Wheat Gluten

Place ingredients for one loaf in a Ziploc bag and shake to mix, then store for future use.

Seed Mix (for 7 loaves, 1 cup per loaf)

1 cup Oats

1 cup Cornmeal

1 cup ground flax seeds

1 cup wheat germ

1 cup sunflower seeds

½ cup white sesame seeds

½ cup chia seeds

½ cup pumpkin seed kernels

½ cup hemp seeds

Keith’s Excellent Bread

1 cup     Water

1 cup    Milk

3 tbsp   Oil (Olive, Vegetable or Butter combo to taste; I use all olive.)

1 ¼ tsp  Salt

3 tbsp Sweetener (Sugar. Brown Sugar, Molasses, Honey, Maple Syrup, Agave, Corn Syrup to taste. I use brown sugar and molasses.)

1 cup    Seed mix (see above)

3 ½ cups (482 gm) Flour Mix (see above)

2 tsp     Bread Machine Yeast

 

Place ingredients, in above order, in bread maker pan. Set machine for a medium crust 2 lb. loaf
